The birds and the bees knees

INGREDIENTS

  • 2 oz gin

  • 1 oz lemon juice

  • 1/2 oz honey syrup

  • 1/2 oz egg white

  • 2-3 drops Spring DewDrops bitters

  • Lemon peel and lavender, for garnish

INSTRUCTIONS

  1. Add honey syrup, lemon juice, and gin to a cocktail shaker. Carefully separate out the egg white from egg yolk, and add egg white to shaker

  2. Dry shake for 25-30 seconds to froth the egg white. Then add ice to the shaker and shake again

  3. Strain over a tall coupe glass, letting the drink settle. Add a few drops of Spring DewDrops floral bitters to the egg white foam

  4. Garnish with lemon peel and lavender sprig
